Pakhi Biryani

Pakhi Biryani

Ingredients :

Red Meat - 2 kg
Kalijira Rice - 1 kg
Onion ( chopped & thinly )  - 16 piece
Black pepper (gol moric)  - 12 piece
Cardamom (alach)  - 8 piece
Nutmeg paste (Jaiphal bata )  - 1/2 tsp
Mace Paste (Jaitri bata )  - 1/4 or ceki tsp
Oil or Ghee - 1 1/2 cup
Sour Curd(toc dhoi) - 1 cup


Green Chilli - to taste
Milk (thick) - 2 cup
Sugar - 2 tbsp
Poppy Seed Paste (Posta Dana) - 1 tbsp
Raisins (Kismis) - 2 tbsp
Chopped Poppy Seed (posta dana) - 1 tbsp
Salt - 4 tsp
Rose Water - 1 tbsp
Tap Water (Kewra jol) - 1 tbsp
Saffron(Jafran) -  1/2 tsp
Reduced Dry Milk (Mawa/khoya) - 1/4 cup or ceki cup

Special Spices/Masala :

Take cinnamon, cardamom, black pepper into a pan on the stove. Fry to it and grind to it.It will done special spices/masala.

Preparation :

First of all,Cut the red meat into small pieces and wash them clean water.Take a separate pan and there will marinated or do mixed the meat with 1/2 tsp special masala,ginger - garlic paste,some pieces of green chilli,1 cup of sour curd and 2 tsp salt for atleast 2 - 3 hour.Set aside for now.On the other side, some saffron will weting with rose water and kewra / tap water in a pots. Set aside.Now, wash the Kalijira rice and dry it. Heat 1 1/2 cup oil in a pan, add there thinly sliced onions and cook until lightly golden browned and caramelized.Half of fried onion or barasta will put a separate pot from the oil.Set aside. Now add the marinated meat into  the oil with other half part of fried onions and fry them till light brown. then,cover to it with a lid tightly and cook on medium - low flame for 20 - 25 minutes.
