Chicken & Beef Curry

Beef Curry 


Serves for six peaple

Ingredients :

Beef - 1 lb (cut into small cubes )
Ginger - Garlic Paste - 2 tsp
Chilly powder - 1 tsp
Coriander powder - 2 1/2 tsp
Turmeric powder - 1/4 tsp
Pepper powder - 1/2 tsp 
Garam Masala powder - 1 tsp 
Mustard seeds - 1/2 tsp
Onion Chopped - 1 cup
Curry Leaves - 2 sprigs
Tomato sliced - 1 small
Potatoes Cubed - 2 small
Coconut Milk - 3/4 cup
Salt - 1/2 tsp
Oil - 2 tbsp

Preparation :

Mix all the ingredients to pressure cook and cook for 4 whistles or till almost cooked. Heat Oil in a pan and splutter the Mustard seeds. Add the Onions and saute till wilted. Add Curry leaves and Ginger - Garlic paste and saute till golden brown.Add Chilly,Coriander, Turmeric and Garam Masala powder and saute till the raw smell is gone for about 2 minutes.Add sliced tomatoes followed by the cooked beef including the remaining liquid and let it boil and reduce. Add the cubed Potatoes, close with a lid and lower the flame and let it simmer till the potatoes are just cooked. When the potatoes are cooked and the water is reduced considerably add the coconut milk and let it boil along the edges.Switch off the flame and serve hot with Rice or Bread.


Chicken Roast 

Ingredients : 

Chiken - 3 ( Take just pice of rost) 
Oil - 1/2 cup 
Salt - 2 tsp
Suger - 2tsp
Orange food colour(jorda er rong) - some for cook
Ginger Paste - 3tbsp
Garlic Paste - 1 tbsp
Red chillie powder - 1 tsp
Onion chopped & fried (payas Barasta ) - 1/2 cup
Garam Masala Powder - 1 1/2 tsp or to taste
Water - some for cook
Aloo Bukhara ( Plums ) - 4/5 piece
Raisin's ( Kismis ) - to taste
Reduced Dry milk Powder (Mawa/Khoya ) - 1/2 cup
Milk Malai - 1/2 cup
Rose water - to taste
Ghee - 1/4 cup

Special Masala :

Ingredients - Cardamom - 2 1/2 tbsp
Cinnamon - 1 1/2 tbsp
Cumin seed(Sha jira) - 1 1/2tbsp
Mace (Jaitri) - 1 tsp
White Black Pepper - 1 tsp
Nutmeg (Jaiphal) - 1 piece
Methods :
Take all of that ingredients and grind it without frying. It will done special powder masala.

Preparation :

Frist of all a big pan is put on the stove. Then give some oil in that pan. When oil is hot properly then give there 1/2 cup chopped Onion for frying. After onion frying,Pic up that and keep in another pot/pan.Set aside.Bangladeshi people calling it Payas Barrasta.Now, a big pan is put on the stove again.Then give there 1/2 cup oil in that pan. When oil is hot/boil properly then all of roast pices are giving there for frying.After some minutes of frying properly then add there 2 tsp salt and 2 tsp sugar. Now add there saffron/orange food colour/jordda's rong mixed with little water.That is why, the roast colour is come out very nice. After some minutes cooking we add there 3 tbsp Ginger paste,1 tbsp Garlic paste and 1 tsp red chilli powder. Then cooked it some minutes properly. Now add there 1/2 cup fry onion powder/Payas Barrasta and add there 1 1/2 tsp famous special masala.Now add there some water for boil the roast. Now cover to it with lid tightly and cook to it at 20 minutes. After 20 minutes add there some Ahalu Bokhara add some Raisins/Kismis and add there 1/2 cup Mawa powder/Reduced dry milk/Khoya.The Mawa powder will doing thick to roast carry. Then add there 1/2 cup Milk Malai. After some minutes we add there few Rose water and 1/4 cup Ghee.Then cook on medium - low flame for 10 - 15 minutes. Serve it hot with Mawa powder and Raisins.
